Nathan Prikikin's books are not easily available anymore so this is a useful summary and with lots of new recipes too. It is helpful that the authors give the calorie, carbohydrate and fat content of each recipe. Pritikin was dedicated to solving the problem of heart disease using exercise and a low low low fat diet. He even had/has some Pritikin live-in health centers in California where people with heart disease issues go to learn how to use diet and exercise to control heart problems. Of course, research in the last 20 years has sometimes contradicted the low fat diet idea, but many people still follow Pritikin's ideas. A useful book to read and of course the recipes are a plus. I still use a couple of Pritikin's stir fry recipes from his books of twenty years ago and my kids think they are wonderful.
